If a cup tastes sour, try a finer grind or hotter water; if it tastes bitter, go coarser. Rinse paper filters with hot water first to remove any papery taste.

Store beans in an airtight container away from light, heat and the stove. A quiet five minutes with a good cup is still one of life's simple pleasures.

Medium roasts are a good all-rounder when you are not sure where to begin. Keep a small notebook by the kettle and record dose, time and what you thought.

Our fictional farmers are paid fairly above the market price for every lot we buy. We roast in small batches so every bag leaves the roastery within days of roasting.
